restaurant week - recipes warm chocolate-hazelnut cake with frangelico cream

restaurant week - recipes warm chocolate-hazelnut cake with frangelico cream

Restaurant: Brasserie

Ingredients
9 ounces bittersweet chocolate (60% cocoa)
12 tablespoons unsalted butter
6 eggs
1 cup packed light brown sugar
¼ cup plus 3 tablespoons Frangelico or other
hazelnut liqueur
1 cup finely ground hazelnuts
1 teaspoon kosher salt
½ cup heavy cream
2 tablespoons confectioners’ sugar

Directions
1. Preheat oven to 350ºF. Butter and lightly flour the
inside of a 9-inch springform cake pan, wrapping
the bottom of the pan with heavy duty aluminum
foil. Set aside.
2. Melt chocolate and butter in a double boiler,
whisking constantly to ensure silky consistency.
3. In the bowl of an electric mixer fitted with a whisk
attachment, combine the eggs, brown sugar and
¼ cup of the liqueur. Whisk on high speed until
pale and frothy. Slowly add the melted chocolate
and whisk until combined. Fold in the hazelnuts
and salt.
4. Transfer the batter to the prepared cake pan.
5. Place the foil-wrapped cake pan in a large roasting
pan. Pour enough hot water into the roasting pan
to cover halfway up the side of the cake pan,
being careful not to get any water inside the cake
pan. Cover the roasting pan with aluminum foil
and bake until a knife inserted in the middle of the
cake comes out clean, approximately 1 hour 20
minutes. Remove the cake pan from the roasting
pan and let cool for 5 minutes. Once the cake has
cooled slightly, remove the foil from the bottom,
run a paring knife around the edge of the cake
and remove cake from the pan.
6. Make the Frangelico cream: Whip the heavy
cream until mixture forms medium peaks. Add
the remaining 3 tablespoons liqueur and
confectioners’ sugar and mix until just combined.
7. Slice the cake into wedges while still warm and
serve with Frangelico whipped cream.

restaurant week - recipes roasted oysters with shallots and herbs

restaurant week - recipes roasted oysters with shallots and herbs

Restaurant: Beacon
Chef: Waldy Malouf

Ingredients
6 tablespoons unsalted butter
1 cup shallots, thinly sliced
1/4 cup dry white wine or dry vermouth
Coarse salt and freshly ground black pepper
1/4 cup chicken stock, vegetable broth or water
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh parsley
Rock salt to roast the oysters on
3 tablespoons whole black peppercorns
24 oysters (see Note)
Lemon wedges, for serving

Directions
1. Preheat the oven to 500ºF.
2. In a heavy saucepan over medium heat, melt 4
tablespoons of the butter. Reduce the heat to low
and add the shallots and wine or vermouth.
Cover and cook until most of the liquid is
absorbed, about 4 to 5 minutes. Season with salt
and pepper and add the stock and the remaining
2 tablespoons of butter. Bring to a simmer, then
remove from the heat and stir in the chives and
parsley.
3. Cover the bottom of an ovenproof baking dish
large enough to hold all the oysters with rock salt.
Sprinkle the peppercorns evenly over the salt.
Open the oysters, discarding the top shell.
Loosen the oysters from the bottom shell, being
careful not to spill their juices, and lay them in the
baking dish.
4. Stir the shallot mixture and spoon some over
each oyster. Roast until the edges of the oysters
just begin to curl, about 5–8 minutes. Serve on
the baking dish with lemon wedges.

Note:
Buying and Shucking Oysters
For this recipe, you need to buy live oysters with
unblemished shells. When opened, the meat
should be pale (its color will vary, but avoid any
that are pink), plump, glossy and should smell
like fresh seawater. If they smell off, discard
them.
When you get the oysters home, scrub their
shells in cold water with a brush. Store them flat
on a baking sheet in the refrigerator, covered with
a slightly damp paper towel, and use them within
2 days.
If you plan to use the oysters immediately, you
can have your fishmonger shuck the oysters for
you—just ask him to reserve their juices so you
can bring them home. Before roasting, strain the
oyster juice and add a teaspoon of the juice to
each oyster.
To shuck live oysters yourself, insert a thin
bladed knife (or oyster knife) into the joint, or
'foot' of the shell, and twist the blade to loosen the
shell. Being careful not to spill the liquid, slide the
knife along the top of the shell (not deeply enough
to cut the oyster). Discard the upper shell and cut
through the muscle holding the oyster to the
bottom shell.

Place the veal shanks on plates (serve over risotto, if desired) and drizzle with sauce from the pan. Garnish with gremolata and serve immediately. (Serve the veal shanks with espresso spoons, which can be used to remove the bone marrow.)

restaurant week - recipes  stinging nettles soup with new orleans gulf shrimp, sorrel and yogurt

Restaurant: Oceana
Executive Chef: Ben Pollinger

Ingredients

1 pound stinging nettles, leaves picked and washed
2 ounces butter
2 tablespoons extra-virgin olive oil, plus more for later
½ small white onion, sliced 1/8-inch thick
1 shallot, sliced
1 small leek, white and light green part only, washed and sliced
1 clove garlic, sliced
½ stalk celery, sliced
¼ long green (or jalapeño) chili, sliced
Salt
Fresh pepper (at Oceana, we use a mix of equal parts white and    black pepper in the pepper mills)
1 small Yukon gold potato—peeled, quartered and sliced
Bouquet of 2 sprigs each thyme and parsley
1 bay leaf
2 cups shrimp stock (recipe follows)
6 cups chicken stock
2 ounces sorrel, picked
2 cups whole-milk yogurt
2 pounds (16 to 20 count) head-on New Orleans Gulf shrimp,    peeled and deveined, heads and shells reserved
¼ cup parsley, chiffonade
¼ cup chives, minced
Toasted sourdough-bread croutons

Directions

  1. In a large pot of salted boiling water, blanch the nettles for 1 minute. Shock the nettles in an ice bath until cold. Drain well. Squeeze any excess water from the nettles, then chop small.
  2. In a 12-quart pot, melt the butter into the extra-virgin olive oil. Add the onion, shallot, leek, garlic, celery and chili. Sweat the vegetables over medium heat with no color until well cooked. Season with salt and pepper.
  3. Add the potato, thyme-and-parsley bouquet, bay leaf and shrimp and chicken stocks. Bring the mixture to a boil, then simmer for 20 minutes. Add the nettles and simmer for 10 more minutes.
  4. Remove the soup from the heat. Remove the thyme-and-parsley bouquet and bay leaf. Stir in the sorrel leaves. In a blender, puree the soup, in batches, until it’s smooth. Strain the soup though a fine strainer. Return the soup to the heat.
  5. Place the yogurt in a mixing bowl and whisk until smooth. Temper the yogurt by ladling 1 cup of the hot soup into the yogurt, stirring constantly. Ladle in another cup. Whisk the tempered yogurt back into the soup, whisking constantly. Season to taste with salt and pepper.
  6. Season peeled and deveined shrimp with salt and pepper. Sauté over high heat in a little extra-virgin olive oil until just cooked (cook shrimp in 2 or 3 batches or in 2 pans). Toss the shrimp with the parsley and chives.
  7. Divide the shrimp evenly among 8 warmed bowls. Ladle the soup into the bowls, top with the croutons and serve.

Serves: 8

restaurant week - dark chocolate pear tart, milk chocolate cream

restaurant week - dark chocolate pear tart, milk chocolate cream

 Restaurant: Oceana
Pastry Chef: Jansen Chan

Chocolate Sablé

Ingredients

3 cups flour
½ cup cocoa
¾ teaspoon baking powder
¼ teaspoon salt
8 ounces butter
1 cup sugar
5 egg yolks

Directions

  1. In a large bowl, sift together the flour, cocoa, baking powder and salt.
  2. In another bowl, cream the butter and sugar. Slowly add the egg yolks.
  3. Add the dry ingredients to the egg mixture and stir until just combined.
  4. Spread the dough between 2 sheets of parchment paper until it is about 1/8-inch thick. Chill overnight.
  5. Preheat the oven to 350°F. Cut the chilled chocolate sablé into the same size as the preferred tart ring. Reserve any scraps. Mark the dough with a fork and transfer to a sheet pan. Place the sablé scraps on the same pan. Bake for 8 to 10 minutes. Allow the sablé to cool. Frost the top of the round sablé pieces with some melted chocolate. Reserve.

Pear Jam

Ingredients

1 pound pears
½ cup sugar
2 tablespoons lemon juice
½ vanilla bean, split and scraped

Directions

  1. Peel and core the pears; chop roughly. In a pot, add all the ingredients and enough water to cover them. Simmer the mixture for 1 to 2 hours, stirring occasionally. Blend until smooth. Let cool and reserve.

Chocolate Custard Cream

Ingredients

2 cups half-and-half
¼ cup sugar
6 egg yolks
11 ounces dark chocolate, at least 64%

Directions

  1. In a saucepan, heat the half-and-half with 1/8 cup of the sugar. Whisk the egg yolks with the remaining 1/8 cup of sugar.
  2. When the half-and-half boils, temper it into the egg mixture, whisking constantly. Return the mixture to the pan and stir.
  3. Immediately pour the mixture over the chocolate through a fine mesh strainer. Stir to combine. Reserve at room temperature.

Milk Chocolate Chantilly

Ingredients

2 2/3 cups cream
4 ounces milk chocolate

Directions

  1. Whip 2 cups of the cream and reserve. Place the milk chocolate in a bowl. In a saucepan, boil the remaining 2/3 cup of cream and pour over the chocolate. Whisk until smooth. With a whisk, quickly incorporate the whipped cream into the chocolate mixture. Reserve in the refrigerator.

Pear Cubes

Ingredients

2 pears
½ cup sugar
1 tablespoon butter

Directions

  1. Peel and core the pears; cut into ¼-inch dice.
  2. Sprinkle the sugar in a skillet over medium-high heat. When the sugar begins to caramelize, add the butter to stop the cooking.
  3. Add the pears to the skillet and stir with a spatula. Allow the sugar to coat the pear pieces.
  4. Remove from the heat and immediately transfer the pear mixture to a slotted tray, allowing any excess liquid to drain; cool.

Chocolate Decoration

Ingredients

Crème Fraîche

Directions

  1. On a tray, place the cool chocolate sablé inside the tart ring. Place a layer of the crème fraîche in the center of the sablé, leaving a ¼-inch gap along the edge. On top of this, place a generous layer of the pear jam. Pour the warm chocolate custard cream around the edge, filling the ¼-inch gap. Continue to cover the pear jam with more custard. Tap the pan lightly to remove any air bubbles. Chill for several hours.
  2. Chop the sablé scraps finely, in a food processor or by hand. Reserve them in a shallow bowl.
  3. To finish, remove the chocolate tart from the refrigerator. Run a clean, hot knife around the edge to lift the tart ring off. Gently roll the sides of the tart in the chopped sablé crumbs. Place the cooled pear cubes on top of the tart. Add a scoop of milk chocolate chantilly on top and garnish with a chocolate decoration.

restaurant week - recipes pan-roasted hanger steak on toasted country bread

Restaurant week - recipes  pan-roasted hanger steak on toasted country bread

Restaurant: Porter House New York
Chef: Michael Lomonaco

Ingredients

2 tablespoons extra-virgin olive oil, plus more for brushing
Two 1½-pound hanger steaks—trimmed, center nerve removed    and each cut in 2 (see Note)
Kosher salt
Freshly cracked black pepper
2 tablespoons unsalted butter
½ cup finely sliced shallots
¼ cup balsamic vinegar
½ cup red wine
1 garlic clove, peeled
8 thick slices country bread

Directions

  1. In a large heavy-bottomed sauté pan or cast-iron skillet, heat 2 tablespoons of the olive oil over medium-high heat for 1 minute. Season the steaks with salt and pepper and add to the hot pan. Cook for 3 to 4 minutes per side for medium rare, turning only when the first side has charred to a deep charred color. Turn and cook the second side. When the steaks have cooked sufficiently, transfer them to a platter; set aside and keep warm.
  2. While the steaks are cooking, put the butter in a medium saucepot and heat for 30 seconds; add the shallots and cook for 5 minutes over medium heat, until the shallots have caramelized and are a golden color. Remove the pan from the heat, add the balsamic vinegar, then carefully return the pan to the stovetop and cook over medium heat for 2 minutes. Add the red wine and cook to reduce the wine by half. Turn off the heat and keep the shallot sauce warm.
  3. Cut the garlic clove in half and rub the cut end over the sliced country bread to season it. Brush the sliced bread lightly with the extra-virgin olive oil, place in a pre-heated oven, toaster or stovetop grill and toast the bread until it’s light golden in color. (This step may also be completed before the steaks have been cooked.)
  4. Place two slices of country bread on each of 4 plates. Slice the hanger steaks into ½-inch-thick slices and place the slices on the country bread; spoon some of the shallot sauce over each portion and serve.

Serves: 4

Note: Hanger steaks, when trimmed of excess fat, will divide fairly evenly into 2 pieces each when the center nerve is removed, yielding two 8-ounce portions per hanger steak. For this recipe, 2 whole hanger steaks, trimmed and cut lengthwise in 2, will provide 4 portions of steak. Cook the steaks pan-roasted or on a grill for best results. Rare to medium-rare is the most desired cooking temperature for maximum flavor and juiciness without toughening—something that happens in the medium-well cooking range.

Homemade French Fries

Ingredients

Canola, peanut or vegetable oil (for more robust flavor, add 50    percent beef lard or suet to the oil, if you dare)
3 pounds Idaho or russet potatoes, well washed and scrubbed
Salt

Directions

  1. Fill a fryer with the oil; preheat to 245°F.
  2. Either by hand or using a french-fry cutter, cut even fries that are ¼-inch-wide square and 5 to 6 inches long out of the potatoes; place them in a bowl of cold water as you work.
  3. When the fryer is hot and ready to cook, completely drain the fries from the water and pat thoroughly dry with paper towels. (This step is critical: water and salt are the enemies of frying oil. The fries can sit on paper towels for a few minutes, in a single layer, to air-dry if you’re not sure you’ve gotten all the water out.) Once the potatoes are dry, add just enough fries to the fryer basket to fill it halfway. (This will ensure even cooking without allowing the frying oil temperature to drop too much, which results in greasy fries.) This first fry is also called blanching, since it’s not meant to add any color. The fries will only be par-cooked and their color will only change from raw white to a slightly creamier color. The batch of fries is done when fries appear to be a more yellow-white than raw-white color, approximately 5 minutes. Remove the fries from the fryer, drain all the oil and spread out on paper towels to cool. Repeat until all the potatoes have been cooked.
  4. Once all the fries have been blanched, they will hold for several hours. Refrigerate them, covered, if you like, but do not freeze them.
  5. Just before serving, heat oil in the fryer to anywhere between 365°F and 385°F (you can use the first batch of oil again, but reuse it only once). Cook the fries in batches. Do not overload the fryer; each batch should fill the basket halfway. Fry each batch to a rich, golden-brown color. Cooking time will vary from 2 to 3 minutes a batch, depending on the fryer and the speed with which it reheats. For crispier fries, fry a bit longer. Drain and salt each batch as soon as it’s done; keep fries covered and warm while you fry the remaining batches.
  6. Serve the fries piping hot alongside the dish of your choice, or on their own.

Creamed Spinach with Bacon

Ingredients

4 ounces sliced bacon, cooked and crumbled
4 to 6 cups fresh spinach leaves, washed well in several changes    of cold water
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
½ cup heavy cream
Fine sea salt
Freshly ground black pepper
Several scrapes of freshly grated nutmeg

Directions

  1. Heat a nonstick sauté pan over low heat. Add the bacon and cook until crispy, approximately 8 minutes. Use tongs to transfer the bacon to a paper towel–lined plate to drain. Once the bacon is cool enough to handle, crumble it into small bits and set aside. Reserve the bacon fat.
  2. Pour 2 inches of water into a vegetable steamer and bring to a simmer over medium heat. Add the spinach leaves to the steamer basket; cover and steam until cooked, approximately 2 minutes.
  3. Transfer the spinach to a colander to drain; let the spinach cool slightly.
  4. In a heavy-bottomed saucepan, heat the butter and 2 tablespoons of the reserved bacon fat over medium-high heat until it melts and begins to bubble. Whisk the flour into the butter and cook for 2 to 3 minutes.
  5. In a separate pot, heat the cream until it’s steaming but not boiling.
  6. Whisk the cream into the butter mixture and bring it to a boil over high heat. Immediately lower the heat and let simmer until thickened, 2 to 3 minutes.
  7. Add the spinach to the cream and cook for 5 minutes. Season to taste with salt, pepper and a few scrapes of nutmeg; stir in the bacon.
  8. Transfer the creamed spinach to a bowl and serve hot.

Serves: 4 as a side dish
