HanGawi is enchanting, enfolding diners in an environment that resembles a Zen mountain retreat and staffed by waiters who are masters of sensitivity training. It is unlike anything else in glitzy Koreatown, and not just because it's vegetarian. Shoes are removed at the door and stored in wooden slots; seating is at sunken wooden tables. The food is an exotic adventure of greens, grains, gourds, roots, mushrooms and edible flowers prepared with balance, color and texture in mind. To get the full experience, order the Emperor's Tasting Menu ($40 per person), a cornucopia that begins with soup and salad and moves on to stuffed persimmon, stuffed lotus, mini pancakes with kimchi, mushrooms and leeks, a stone bowl of rice with kabocha squash and tofu lemon pudding.
