Pop-up shops and restaurants are quite the trend these days, bringing buzz to empty spaces that are temporarily available. The most enterprising in the food category is What Happens When, a downtown experience via John Fraser, of the Upper West Side's acclaimed Dovetail. With funding help from Kickstarter, the young chef and his creative team assumed the lease of the abandoned Le Jardin Bistro space in January. Every 30 days, they put on a show—transforming the restaurant's decor, menu, lighting, music and even the servers' outfits. What doesn't change is the $58 price tag for three courses. So far it's been a smash hit. The third "movement" of the project began March 29. When the lease expires in the fall, so will the restaurant.
