Media-star chef Sam Talbot was recently profiled in The New York Times' style pages, with an observation that "whenever his name appears in print, the words 'hot,' 'hottie' or 'hottest' are usually not far behind." That means all eyes are on him at Imperial No. Nine, in the new, ultrachic Mondrian SoHo hotel. His sustainable seafood menu was informed by organizations like the Monterey Bay Aquarium's Seafood Watch, so patrons can rest assured that the raw bar plateau—king crab with sweet-and-sour butter as well as seared scallops with pickled melon—are not on any endangered species lists. The restaurant takes up two rooms that are a bit Alice in Wonderland—an indoor garden party design with live ficus trees, a mirrored communal table, ornate chandeliers and a riot of blown glass.
